Caramel Syrup

3 tbsp dark brown sugar
225G white granulated sugar
240mls hot water
1 1/2 tsp. of pure vanilla extract

Firstly, put the brown sugar ,this will give the syrup its caramel taste, the white sugar and water into a smallish saucepan, stir until well combined over a medium-low heat. bring to a boil, lowering the heat  to simmer. Continue to simmer for 10-15 minutes until it has reduced and then take off the heat.

Secondly add the vanilla, stir and then allow it to cool before storing in an airtight container in the fridge.

We use approx. 2 Tablespoons in each cup   Result……Delicious!

Vanilla Syrup

225G granulated white sugar
240mls water
2 tsp. pure vanilla extract

Use a smallish saucepan and bring sugar and water to boil. Lower the heat and simmer until it has reduced to syrup, approx. 5 minutes. Add vanilla extract to the syrup. Pour into airtight container and refrigerate for up to 2 weeks.

Gingerbread Syrup

480 mls water
340g granulated sugar
2 1/2 tsp. ground ginger
1/2 tsp. ground cinnamon
1/2 tsp. vanilla extract

Put all the ingredients in a saucepan. As before, bring it to a boil and then reduce to a simmer. Simmer (uncovered) for 15 minutes and then take off the heat. Cover and allow it to cool for a while. Strain through coffee filter or fine sieve to get rid of any of the ginger and cinnamon grains (although you don’t have to do this of course if you can’t be bothered!)  Store in an airtight container in fridge.
